Zesty and delicious this Black Fig jam is one of the staple items in my fridge. I use it as a regular jam and for glazing vegetables and fruits before or after baking.

Remove figs from the water and chop them into pieces for easy blending. Keep the fig soaking water aside.
Add figs into a blender (regular or immersion blender will work) with sea salt, lemon juice, nutmeg, cardamom, cinnamon, and 2 tablespoons of fig soaking water**
Blend until desired consistency is reached.
Store in the refrigerator for several weeks***

*Soak dry figs in filtered or spring water for 4 hours.**If you're have difficulties blending you can add the water that remains after soaking 1 tbsp at a time;***For longer storage you can freeze it for up to 3 monthPrep time doesn’t include soaking time (4 hours).
