Remove shells from tamarind and give it a quick rinse under the running water. Soak tamarind in half a cup of warm water at least 20 min (I love to soak mine even longer). Place medium-mesh sieve over a bowl. Transfer tamarind into a sieve. Using a silicone spatula or large spoon work tamarind through the sieve, leaving seeds behind. You will end up with fine tamarind paste.
Combine tamarind paste, peanut butter, lemon juice, coconut aminos, ginger and seasoning mix*. Mix well and enjoy
Keep it in an air tigt jar in the fridge.
Notes
*If you run out of your seasoning mix and don't have all of the ingredients at this time, you can go by adding sea salt and pepper to taste or use your favorite Chaat Masala mix.Overall time does not include tamarind soaking time (1 hour)
