Heat a couple of tablespoons of water in a pan on medium-low heat, add spice mix, french green beans, lemon juice. Cover, let it simmer for 5 minutes. Transfer to a plate and set aside to cool.
Slice vegetables into long thin strips.
Fill a large dish with warm water*. Dip 1 sheet of rice paper in warm water and place it onto a large cutting board.
Place vegetables on the bottom half of the rice paper and roll the bottom tight. When halfway up, fold-in sides and continue rolling
