Detox khichari (khichadi or kitcheri) for weight loss with horse gram, buckwheat groats, and asparagus. Light and moist yet nourishing and filling this khichari is a delicious and satisfying way to cleanse and detoxify the body and manage your weight.

Instructions
Prep
Soak horse gram, yellow mung dal, and rice in separate bowls overnight with a pinch of salt and a splash of lemon. In the morning rinse using a mesh sieve and set aside covered with a cotton cloth.
Khichari
In a saucepan, combine horse gram with 2 cups of water. Cover with a lid. Bring it to a boil, lower the heat and cook for at least 60 min.
Warm-up ghee (or coconut oil) in a medium pot. Mix in curry leaves, Basic Savory Sattvic spice mix, Metabolism-boosting spice mix. Warm up the spices for about 1 min.
Add carrots, zucchini*, daikon radish, buckwheat, and mung dal to the same pot. Mix well. Add 2-1/2 cups of hot water and salt. Cover with the lid after bringing it to a boil, reduce the heat, and cook for about 20 minutes. Stir as needed.
Add cooked horse gram, asparagus, and black pepper. Check for salt. (add additional if needed). Cover with the lid and cook for an additional 5-8 min. (or until asparagus is tender).
Serving
Serve hot with a wedged quarter of lime**on the side (per portion). Sprinkle finely chopped parsley, cilantro, or fennel greens on the top. Right before eating, squeeze some lime juice.
Notes
*if you have Ash Gourd you can substitute it for zucchini.**It is essential to add lime juice to your dish right before eating (not during cooking). The food should cool down a little bit. Food with lime juice becomes very acidic if lime (or lemon) juice is added to the boiling point or reheated to the boiling point. That is why I recommend serving this dish with individual wedges on the side of each plate.
