In a large bowl mash bananas with a fork, incorporate cinnamon and nutmeg. Whisk in 1 cup of cashew milk (or any other plant based milk).
Incorporate chia seeds, oats, apple (chopped into small cubes), and raisins into the mixture following this order.
Transfer into 2 glass jars or glass containers and set in the fridge.
Place dates, date soaking water and peanut butter into a blender and blend until smooth. Your vegan caramel is ready. Transfer to a small jar and place in the fridge.
In the morning garnish your overnight oats with a thin slices of apple, walnuts, and sliced dates for caramel flavor.
