To cut sweet potato Hasselback style, a couple of chopstick sticks will become handy.

Stokes Purple sweet potatoes

If you have wooden chopsticks, you can place them on both sides of the potato to prevent the knife from cutting all the way through. Slice your purple sweet potato into thin slices on the top, leaving about a quarter inch on the bottom to hold the potato together.

In a small bowl, combine fresh thyme, olive oil, Himalayan salt, and a generous amount of black pepper. You can add a dash of smoked paprika as well.

Now oil them up, making sure to get oil and spices between slices.

And into preheated to 425 degrees oven for 45 min to an hour.

  • 1 purple sweet potato (large)
  • 3 tbsp olive oil (virgin)

Instructions
  • Preheat oven to 425 degrees
  • Scrub clean your sweet potato. Slice it into thin slices on the top, leaving about a quarter inch on the bottom to hold the potato together. If you have wooden chopsticks, you can place them on both sides of the potato to prevent the knife from cutting all the way through.
  • In a small bowl, combine fresh thyme, olive oil, Himalayan salt, smoked paprika, and a generous amount of black pepper.
  • Now oil up purple sweet potato, making sure to get oil and spices between slices
  • Place into preheated to 425 degrees oven for 45 min to an hour*
  • Serve right away. Goes very well with rice or quinoa dishes

*If you want your sweet potatoes to come out soft and moist you can bake them at 380°F, wrapped in foil for 1:30 to 2 hours
