Purple Stokes sweet potato—Hasselback style. Stokes Purple sweet potatoes have a rich flavor and are denser and drier than regular sweet potatoes. This sweet potato has an almost sausage-like taste. May I say pepperoni? 🤔 Yes, sort of like pepperoni. I love to serve it with quinoa or rice.

To cut sweet potato Hasselback style, a couple of chopstick sticks will become handy.

If you have wooden chopsticks, you can place them on both sides of the potato to prevent the knife from cutting all the way through. Slice your purple sweet potato into thin slices on the top, leaving about a quarter inch on the bottom to hold the potato together.

In a small bowl, combine fresh thyme, olive oil, Himalayan salt, and a generous amount of black pepper. You can add a dash of smoked paprika as well.

Now oil them up, making sure to get oil and spices between slices.

And into preheated to 425 degrees oven for 45 min to an hour.
I love to serve it with quinoa or rice.


- 1 purple sweet potato (large)
- 3 tbsp olive oil (virgin)
seasonings
- 1 tbsp thyme leaves (fresh)
- 1/4 tsp Himalayan salt
- 1-2 tsp black pepper (freshly ground)
- 1/4 tsp smoked paprika (optional)
- Preheat oven to 425 degrees

- Now oil up purple sweet potato, making sure to get oil and spices between slices
- Place into preheated to 425 degrees oven for 45 min to an hour*
- Serve right away. Goes very well with rice or quinoa dishes
