RASPBERRY CHIA SEED JELLY

The Raw Raspberry Chia Seed jelly is naturally flavorful yet so delicate and silky. This gentle rosy delight can add sophistication to any dessert, or you can just dunk a cooky into it.

Total Time: 10 minutes
Servings: 10
Total Calories: 19kcal
Ingredients
  • 2 cups raspberries
  • 2 tbsp white chia seeds (ground)
  • 1 tsp lemon juice (freshly squeezed)
  • 2 tbsp jaggery (add more, less or none to taste)
  • 1 tsp cinnamon (optional)
Instructions
  • Add 1 cup of raspberries into a metal mesh strainer** and using a silicone spatula (or a large spoon) process them through leaving the seeds behind. Repeat the posses with the second cup. You will end up with about 1 cup of a beautiful raspberry puree.
  • Combine raspberry puree with jaggery and lemon juice***
  • Add ground chia seeds. Stir well.
  • Transfer mixture into an air-tight jar and place it in the refrigerator for at least 30 minutes.
  • Store in the refrigerator for 1 to 2 weeks****
Notes
*setting in the refrigerator is not included in a total time (30 mins).
**you can use any mesh strainer. For quicker processing your strainer shouldn’t be too fine, just fine enough to retain the seeds.
***you can spice it up with a pinch of cinnamon, add a vanilla bean, or your favorite spice;
****For longer storage you can freeze it for up to 3 months;
