Inspired by an ancient Roman mustard recipe, this creamy salad dressing is so satisfying and very versatile. It goes well with almost any salad. In my house, it’s hard to keep this salad dressing in the fridge. Once it’s on the table – consider it gone.

With its creamy texture and rich flavor, Roman Mustard dressing adds a complex dimension to the simplest of salads. I was inspired by the combination of spices and cooking methods of ancient Romans, heavily influenced by Greek culture after I came across “The Book of Apicius” (you can entertain yourself here later).

I love the combination of the buttery, sweet pine nuts with the mild, sophisticated almond flavor and sharpness of grainy Sattvic mustard.

Things to consider before you make your salad dressing

Pine Nuts – Raw or Toasted?

Pine nuts are big contributors to the flavor of this dressing. You can use ether raw pine nuts or toasted ones.Both kinds work very well. There are two things to consider when choosing between raw or toasted.

  • The intensity of flavor. Raw pine nuts (as any other nuts or seeds for this matter) are much milder in taste in the raw form. The flavor and fragrance intensify with a roast. So if you want a milder pine nut flavor – use the raw ones.If you want it more intense you can buy roasted pine nuts or roast them yourself.

How To Toast Pine Nuts

1. Place pine nuts in a dry frying pan. The pan should be large enough to accommodate your pine nuts in a single layer.
2. Set heat on medium-low and cook until golden (or golden-brown if desired). The higher the roast, the more pronounced the pine nuts flavor will transpire.
3. Be sure to not over-cook pine nuts. The second they’ve reached the desired color, transfer them to a plate right away and set to cool.

  • The quality of oil contained by nuts is changing with terminal processing. Even though nuts are beneficial for your health in any form, they’re considered to be easier on digestion when raw. With this said, you can thoroughly enjoy the flavor of roasted pine nuts – they are good for you 👌🙂.

Almond Meal or Raw Almonds?

In this recipe, I’m using a blanched almond meal. I choose to do it for convenience purposes. If you want some yummy dressing on the fly – this is a definite way to go. But this particular dressing can be made with fresh almonds as well. It doesn’t add too much time to the processing either. You just have to plan ahead, so you can blanch your almonds (soak them and then remove the skin). This step is very important and not to be skipped. Ingredients
  • 1/3 cup almond meal (blanched)
  • 1/3 cup pine nuts (Raw, soaked)
  • 1 tbsp mustard (raw sattvic mustard)
  • 1/3 cup lemon juice (freshly squeezed)
  • 1/2 cup water (filtered)
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
Instructions
  • Place all ingredients in a blender and blend until smooth.
  • Transfer into an airtight jar or a bottle and let it set in the fridge for at least 15 minutes.
  • You can store it in a fridge for several days

So if you plan on having a glorious salad for your Saturday or Sunday brunch, you can make it with raw almonds. Just don’t forget to soak your almonds overnight. But, if you need a perfect salad dressing on the fly – make it with blanched almond meal.
