For this bowl, we will need freshly shredded coconut (or one from the freezer).

The next ingredient is raw buckwheat groats, you can swap them for raw cashews, but I prefer the buckwheat for its nutritional value and ease of digestibility.

You have to soak raw buckwheat overnight and rinse it in the morning. You can use part of it right away, and the other part you can leave on the counter covered with a cotton cloth. Rinse it every 6 to 8 hours, and by the next day, you will have these beautiful sprouts.

Ingredients
  • 2 cups winter melon (chopped)
  • 2 mangoes (chopped)
  • 1 banana ( ripe)
  • 1/3 cup coconut (freshly shredded or from the freezer)
  • 1/2 cup green buckwheat grouts* (raw, soaked overnight, rinsed)
  • 1 tbsp organic date powder (or 2 Medjool dates)

Instructions
  • Place all ingredients in a blender in the order listed and blend until smooth and creamy
Notes
*you can substitute buckwheat for raw cashew
